Great Bay Fish Cakes
2 lb. Favorite Fish (Bluefish, Tautog, Flounder, Perch)
2 Eggs
4 lb. Mashed Potatoes (milk, margarine, salt and pepper)
Bread Crumbs, Plain
Garlic powder
Onion powder
Make mashed potatoes first. Allow to cool.
Beat eggs, add to potatoes. Season to taste with garlic and onion powder. Meanwhile, boil fish until flaky. Drain fish and flake it like you would tunafish for salad. Mix fish and mash potatoes together. Make balls with the mixture, approx. 2 inch diameter. Roll balls in the breadcrumbs. Flatten. Place small amount of margarine on top of each cake. Bake 30 minutes at 305° until cakes are golden brown.
Variations: For lower fat content, omit use of margarine on top of the cakes. You could also add corn or chopped onions for more flavor.
