Omelette ~ A Taste of Italy
3 Large Eggs
1 Roasted Red Pepper, diced finely
3 Greek or Green Olives, diced finely
1 Tbsp. Milk
Shredded cheese - I prefer Kraft Taco
Pepper
Salt
Garlic Powder
Onion Powder
Cumin
Olive Oil
Wisk eggs and milk in a bowl. Add spices, to taste. I keep the garlic powder, salt and cumin light, heavier on the pepper and onion powder.

Heat small frying pan with cover to medium/medium low heat (depending on the type of pan). Spray pan with olive oil. When pan is hot enough that water sizzles when you sprinkle it, pour in the egg mixture. Sprinkle the red pepper and olive all through the mixture so that it is distributed evenly. Sprinkle cheese over the top. Cover the pan.

Cook until edges are golden brown and omelette is puffed up, approx. 5-6 minutes. If top of omelette looks like it needs a little more cooking, carefully slide the omelette with a spatulla and flip it over. Serve folded in half with the golden side out.
